Why −18°C or lower matters, why meat should not be refrozen, and how to follow the FIFO principle.
Why −18°C or Lower
For long-term storage of meat, the freezer chamber temperature should generally be −18°C or lower. At this temperature, microbial growth practically stops and product quality changes far more slowly. Keep in mind that freezing does not kill bacteria — it only halts their activity. That is why only clean, high-quality meat that has been chilled promptly should go into the freezer.
The more stable the temperature, the better the meat retains its texture, color and flavor. Frequent fluctuations cause ice crystals to grow, which damages the tissue and leads to loss of juices when thawed.
Avoiding Refreezing
Refreezing thawed meat is generally not recommended. During thawing, microorganisms on the surface become active again, and a second freeze degrades quality even further: the meat dries out and loses juice and flavor. A few practical tips:
- Divide meat into portions before freezing so you only thaw the amount you need;
- Thaw meat in a refrigerator at a low positive temperature rather than at room temperature;
- Minimize the time the product spends outside the cold chain during transport and loading.
Packaging
Proper packaging protects meat from drying out and from so-called freezer burn — when the surface dries and discolors due to contact with air. The best results usually come from vacuum packaging or airtight bags and containers with as much air removed as possible.
- Use only food-grade packaging materials;
- Label every package with the product name and freezing date;
- Store raw meat separately from ready-to-eat products.
FIFO — First In, First Out
The FIFO (First In, First Out) principle means that the batch that arrived at the warehouse first is used first. This reduces the risk of products expiring and makes inventory easier to control. To follow FIFO:
- Place new batches behind older ones or in a separate, clearly marked area;
- Keep records of incoming and outgoing stock;
- Check inventory and expiry dates periodically.
It is also important not to overload the chamber: leaving space between pallets and walls ensures even circulation of cold air.
Temperature Control
The temperature in a freezer chamber should be checked regularly and, ideally, logged. This lets you spot any deviation in time and prevent product damage. When receiving meat, also check that it is already frozen solid and that the packaging is intact: a freezer chamber is designed to store frozen products, and its main purpose is not the rapid freezing of large quantities of warm goods. Whenever in doubt, always put safety first.
