Freeze drying is a food storage method that allows food to be stored for years without spoiling. Products placed in a dry freezer are quickly frozen at temperatures as low as -40 degrees. The ice around the food is then evaporated by a vacuum. In industrial freeze-drying installations, first of all, products are frozen using cooling systems using cold air down to -40 degrees. After being stored in freezer warehouses, the food is placed into a freeze-drying machine. Ice that is in food goes into the vapor phase when heated in a vacuum. (16-21 hours).
